Turnips with Tomatoes & Mint
Turnips don't get a lot of love, but they are pretty darn delicious. Especially when combined with...herbs! This dish is delicious served over your favorite rice.
Ingredients
1 1/2 pounds turnips
4 tablespoons olive oil
12 oz tomatoes, roughly chopped
1 inch fresh ginger, finely grated
1 tablespoon ground coriander
1/2 teaspoon ground turmeric
1/4 teaspoon cayenne
2 cups water
3 tablespoons chopped cilantro
2 tablespoons chopped fresh mint leaves
1 teaspoon salt
Peel the turnips and cut in half lengthwise, then cut into 1/4 inch slices.
Heat oil (or ghee, if you have it) over moderately high heat. Add tomatoes and stir-fry for 2 minutes. Add the ginger, turmeric, and cayenne.
Cook until the sauce is thick, about 2-5 minutes. Add turnips, water, cilantro, mint, and salt, and cover partly. Cook over medium-low heat for 20 minutes, stirring occasionally.
Cover tightly and cook for another 10 minutes over low heat until turnips are tender.
