The Johnson Family's Classic Celeriac Remoulade
 one of Misha’s family’s favorite recipes

Ingredients:
1 large (or 2 small)
 head celeriac, peeled & grated

Dressing:
1/2 cup olive oil
1/2 cup  mayonaise
3 tbsp. Dijon mustard
2 tbsp wine vinegar
2 tsp. chopped fresh tarragon or 1/2 tsp. dried
salt & pepper to taste

Directions:
  1. Grate celeriac into a bowl.
  2. In a separate bowl, combine the two oils and mustard. Beat until smooth and creamy.
  3. Beat in vinegar.
  4. Season. 
  5. Stir into celeriac.
  6. Let marinate for at least two hours. Serve chilled.
