Conversion Kale Salad
Share this dish with anyone who loves kale or someone who doesn't (yet). We promise they will love kale forever more after eating this dish!
1/2 cup olive oil
1/4 cup raw apple cider vinegar
1/8 cup maple syrup
4-6 garlic cloves, minced or crushed
1/4 cup sunflower seeds (optional)
1/2 cup sweet corn off-the-cob (optional)
Pour over 1-2 bunches of kale. This salad is best after marinating for a couple hours or overnight, which allows the kale to soften up a bit. If you don't have the time, you can also "massage" the kale before you dress it, crunching it in your hands to break down the cell membranes.
Optionally, skilled sunflower seeds and/or sweet corn in an oil of your choice until golden brown. Mix into the salad right before serving.
